Fluffy Pancakes with Strawberries
This recipe makes lovely, thick, fluffy pancakes that are delicious served with cream and fresh strawberries.

Ingredients
1 cup self-raising flour
1 tablespoon sugar
A pinch of salt
¾ cup milk
1 tablespoon lemon juice
1 egg
1 tablespoon melted butter

½ teaspoon baking powder
½ teaspoon vanilla extract
Whipped Cream
Strawberries
Icing Sugar
Salted Caramel Syrup (optional)
Method
Step 1 - Make sour milk
In a jug, mix the milk and lemon juice. Let it sit for 5 minutes — it’ll thicken slightly and curdle a bit (that’s good!).
Step 2 - Mix dry ingredients
In a bowl, sift the flour, sugar, salt, and baking powder.
Step 3 - Combine wet ingredients
Add the egg, melted butter, and vanilla to your milk mixture, and stir.
Step 4 - Combine wet and dry ingredients
Pour the wet mixture into the dry ingredients and stir gently until combined.
Let the batter rest for 5–10 minutes before cooking.
Step 5 - Cook the pancakes
Heat a greased non-stick frypan over medium-low heat.
Pour about ¼ cup of batter for each pancake.
Cook until bubbles appear on top and edges look set, then flip and cook until golden brown.
Serve with whipped cream, fresh strawberries, & Syrup
Stack them up and serve with whipped cream, fresh strawberries and Salted Caramel Syrup or maple syrup.
