Chicken Satays with Creamy Peanut Sauce
These chicken satays with creamy peanut sauce are one of our favourite easy campground meals. We cooked them up at Green Hill Lake Campground, enjoying the simple pleasure of good food in the great outdoors. Packed with flavour and quick to make, this recipe is perfect for motorhome and camping trips when you want something tasty without the fuss.

Ingredients
Chicken Satays
500g Chicken Thighs
2 teaspoons Crushed Garlic
2 tablespoons Soy Sauce
1 tablespoon Honey
1/2 Fresh Lime
2 tablespoons Coconut Cream
1 tablespoon Vegetable Oil
Wooden Skewers

Ingredients
Peanut Sauce
1/2 Cup Crunchy Peanut Butter
1 teaspoon Crushed Garlic
1 tablespoon Soy Sauce
1 tablespoon Honey
1/2 Cup Coconut Cream
1/2 Fresh Lime
Serves 2
Method
Assemble the Skewers:
Cut the Chicken thighs into the same size pieces, then thread them onto skewers.
Marinate the Chicken:
In a bowl, combine garlic, soy sauce, brown sugar, lime juice, coconut cream, and oil. Then add the chicken skewers and toss to coat well. Cover and marinate for at least 30 minutes (or longer if you have the time).
Make the Peanut Sauce:
In a small saucepan, combine the peanut butter, garlic, soy sauce, brown sugar, coconut cream, lime juice, and sweet chilli sauce. Warm gently over low heat, stirring until smooth and silky. If it gets too thick, stir in a tablespoon or two of water. Keep warm.
Cook the Satays:
Grill the skewers for about 3–4 minutes per side, or until golden brown and cooked through. They’ll develop that lovely caramelised edge from the brown and coconut cream.
Plate Up & Serve:
Lay the skewers on a platter, spoon a little peanut sauce over (or serve in a dipping bowl on the side). Garnish with chopped peanuts, coriander, and lime wedges.
