Gourmet Bacon and Egg Rolls
These gourmet bacon and egg rolls are a simple yet indulgent camping breakfast, made with crispy bacon, perfectly cooked eggs and fresh rolls. We cooked them while camping at Mt Franklin Reserve near Daylesford — the perfect way to start a day of exploring the region.

Ingredients
2 Free Range Eggs
4 Rashers Gourmet Bacon
Baguette or Rolls
Baby Spinach
1 tablespoon lemon juice
Tomato Relish
Butter
Serves 2
Method
Cook the bacon:
Heat a frying pan over medium heat. and cook the bacon rashers until they are golden brown and crisp. Set aside and keep warm.
Fry the eggs:
In the same pan, melt some butter, crack in the eggs and cook until the whites are set but the yolks are still slightly soft.
Toast the rolls:
Spread butter on your rolls or baguette and then lightly toast them in the pan.
Assemble the rolls:
Layer the spinach, hot bacon, and fried egg on each roll and add tomato relish.
